This recipe is a celebration of the vibrant flavours of summer, drawing inspiration from our Orange blossom print and the tangy sweetness of the delicious fruit.

In this guide, we'll walk you through the steps to create a delicious double-layered cake, complete with a luscious cream and homemade jam filling. Simple and delicious, it's a treat that captures the essence of sunny days and outdoor fun.

 

The Cake

Whether you're aiming for a double-layered cake with cream and jam nestled in the middle (for which you can halve the cake mixture and cook them separately), or you prefer a wonderfully thick and tall cake (in which case, double the recipe), we've got you covered. However, a single cake is plenty if you'd rather top it with cream and jam.

Ingredients:

- 2 cups blanched almond meal
- 2 medium oranges
- 5 eggs
- 2 tsp vanilla essence
- 1 tsp baking powder
- ¾ cup sweetener of your choice, such as granulated coconut, rapadura sugar, or a combination of granulated sugar and honey.
- Optional: 2-3 drops of orange essential oil

Method:

1: Begin by boiling the oranges for 30 minutes in a saucepan.
2: While the oranges simmer, you can prepare your jam (details below!)
3: Preheat your oven to 170 degrees Celsius
4: Once the oranges have slightly cooled, quarter them and trim any parts that aren't worth eating (such as the top and bottom of the orange). Place all the ingredients in a high-powered blender and blend until smooth.
5: Line a cake tin with baking paper or your preferred oil, then pour in the mixture.
6: Bake in the oven for approximately 30 minutes or until the center is firm to the touch and the top turns a lovely golden hue.
7: Allow the cake to cool before adding the cream.

The Jam

Ingredients:

- 1 cup frozen strawberries OR blueberries
- 1 tbsp lemon juice
- 1 tsp vanilla essence
- 1 tbsp chia seeds (if using strawberries) and 1.5 tbsp (if using blueberries) and 1.5 tbsp (if using blueberries)

Method:

1. Blend your chosen berries until they are completely smooth. Then, add the remaining ingredients and gently heat on low until it melts but isn't scorching hot. Set it aside to cool in the fridge.

The Cream

Ingredients: Cream of your choice!

You have the option to keep your cream as is (still exceptionally delicious) or whip it to achieve a fluffier texture, just as shown in the images. If you have pouring cream, whipping it is a great idea. Use an electric device, but keep a close eye on it, as the time for cream to whip can vary; mine took only 15 seconds to reach the perfect consistency. Avoid over-whipping by maintaining eye contact with your cream—stop once it's slightly thicker, and add a few more seconds if necessary. It's better to be slightly under-whipped than over-whipped.
