Our friends at Goodfor have put together a yummy recipe to make your own lactation cookies. This recipe uses all good ingredients such as rolled oats, brewers yeast and ground flax seeds which are all galactologues (known to promote milk production), as well as tasting delicious too!

Recipe

Makes about 12 cookies

Ingredients
1 cup oat flour
1 cup jumbo whole oats
½ cup coconut sugar
½ cup dark chocolate drops or buttons
2 tbsp brewers yeast
2 tbsp ground flax seeds
1 tsp baking powder
¼ tsp cinnamon
¼ tsp sea salt
100g butter or *coconut oil (melted) or ½ cup.

Method
Preheat the oven to 180 degrees and prepare a baking tray with baking paper. Place flaxseeds in a small ramekin with 4 tbsp water, mix and leave to sit for 5 – 10 mins. Combine all other dry ingredients in a mixing bowl. Once the flaxseeds have gelatinised add them to the mixture, along with the melted butter or coconut oil. Mix really well until a thick consistency is reached. It may start out a little dry but just keep mixing. Roll into balls and place on the prepared baking tray. Press balls down slightly if you want flatter cookies. Bake in the oven for 10 minutes. Allow to cool.

Optional – top with flakey sea salt for extra flavour.
